Apple of My Chai has a pleasant autumnal scent of Chai and apple. Upon sipping the cider, there is a little bit of a bite upfront, as well as a a slight tingling sensation on the tongue. Shortly afterwards, the Chai starts to emerge and is accompanied by notes of lemon. At first, the Chai-lemon flavor is subtle and secondary to a sweet apple flavor, but by the time you are a third of the way through the sip, it is more robust and dominant over the apple. Chai and lemon remain the prominent flavors throughout the rest of the sip. In the aftertaste, Chai is initially the only flavor, but after a second or two, a bitter taste comes through and is accompanied by some acidity. This is a semi-dry cider that is between light and medium bodied, leaning toward light. It has a bookend-esque acidity profile: it is present in a small amount at the beginning and end of the sip. Lastly, the carbonation is between light and medium, leaning toward medium, and there was no tannin.
Overall, this is a great fall cider. The Chai flavor gives the cider a nice seasonal feel to it. The acidity and notes of bitterness help to balance out the sweetness, causing the cider to feel more semi-dry than semi-sweet, and this is something that I appreciated. A lot of the fall ciders out there tend to be quite sweet, and while those ciders have their place as a dessert drink, it is nice to have a less sweet option, such as Apple of My Chai, for those days when you want a lighter seasonal drink. I will miss certainly miss this cider when it is no longer on the shelves.

Apple of My Chai starts off with a noticeable but very small bite. It is gone before you really notice it.
Came off as being between light and medium bodied.
I got a low amount of acidity in the first ¼ of the sip, but it quickly faded away and let the other notes take hold.
The carbonation of this cider felt between low and medium, landing closer to medium.
I couldn’t pick up on any tannin in this one.
The flavor in Apple of My Chai makes this another good one to add to the fall collection. It quickly starts off on a mild citrus note with a sweet apple flavor akin to a Cortland until about ¼ into the sip. That gives way to an apple-Chai flavor, which increases in intensity and flavor until the end and well into the aftertaste.
This cider begins semi-sweet, but the Chai flavor helps it to finish closer to semi-dry.
Overall, Apple of My Chai is a nice, pleasant fall cider. The apple and Chai combo makes this a great choice for sitting back on those autumn days watching the leaves fall in your plaid shirt. It lends itself to being more unique than most ciders and is a great choice if you see it at a bar or restaurant.
