It expresses flavors from three different crab apple varieties, balanced out with the sweetness of Tolman Sweet and mildness of Rome Beauty apples. It has a dark golden color and a flavor that lingers as you drink it. A nice amount of tannins and balanced acids make this the cidermakers’ drink of choice.

Aroma: Sweet apple and crab apple are primary; crab apple dominates secondary.
Body: Relatively light
Flavor Profile: A tart apple and lemon flavor upfront gives way to a very subtle sweet apple flavor. The end of sip and aftertaste consist of tart apple, lemon, and bitter notes.
Overall Thoughts and Rating
Embark’s Crab Series, Vol. 1 is a lovely cider. The acidity, tannin, and carbonation play off one another nicely, and the mouth-puckering finish leaves you wanting to go back for another sip. This cider is enjoyable both on its own or paired with a savory dish. If you happen to come across a bottle of this limited release cider, be sure to grab it.
Overall, I liked this Crab Series. Despite it being quite dry, it had a lot going on with its flavor profile. I enjoyed the tartness and acidity and felt that they nicely complemented the dryness. If you enjoy dry ciders, you would be wise to pick yourself up a bottle of this and maybe pair it with a nice sharp cheese.
